The days are getting darker and the temperature is getting colder which makes this delicious and warming fresh fruit strudel recipe perfect for an evening treat! What’s more, many of the ingredients needed can be found in your office fruit box from The Fruit People! If you do take a few pieces of fruit home to make this, just be sure to bring in a few slices the next day to share with your colleagues…

Ingredients

2 sheets of puff pastry
1 egg
1 tbsp water
2 tbsp sugar
2 cooking apple
1 apple
1 pear
Handful of berries
1 tsp cinnamon
3 tbsp raisins
2 tbsp sugar
Chopped nuts

Method

Finely chop the apples and pears. Add these to a bowl along with the berries, raisins, cinnamon, sugar and the tablespoon of flour. On a clean tea towel that has been sprinkled with flour, lay down 2 sheets of puff pastry, overlapping each other to form one large sheet (10 x 12 inches). Press down on the edges to ensure they stick together.

In a separate bowl, beat the egg and water before gently applying and covering the whole surface area of the pastry. Try not to make any holes! Sprinkle with chopped nuts before adding your fruit filling down a line about 1-2 inches in from the edge of the pastry. Using the tea towel, roll the pastry up on itself, making sure the filling is tucked in neatly. Apply another layer of the egg wash to the top and roll again. Continue this until your strudel has been formed and don’t forget to tuck in the top and bottom holes! Before placing in a preheated oven (200C), cover the strudel liberally in the egg wash to get that golden brown colouring. The pastry should be done in 10-20 minutes so keep an eye on it so that it doesn’t burn!
